Homemade Granola recipe



I mentioned in my smoothie bowl post (you can read it here) that I hadn’t yet mastered homemade granola… not anymore! I’ve since made this recipe several times and it’s honestly faultless! I’d really recommend making your own granola if you can as shop-bought ones are often filled with lots of sugar and hidden unnecessary ingredients so making it yourself means you know exactly what’s in it! This recipe is super flexible too so feel free to switch the ingredients for whatever you have on hand, any nuts, seeds and dried fruit will do!



Ingredients:
2 cups raw, whole rolled oats 
¼ cup almonds
¼ cup pecans
¼ cup sunflower seeds
¼ cup pumpkin seeds
½ cup unsweetened dried berries
3 tbsp maple syrup
2 tbsp virgin coconut oil

To make, simply mix everything together (you can melt your coconut oil first if it’s solid or I just mix everything with my hands so the heat from them melts it) and spread out on a lined baking tray. Bake in an oven preheated at 150 °C for around 10 minutes until the oats are slightly golden. This can be kept for around 2 weeks, just store in an airtight container once cooled!


You can eat this however you want; I usually just top it with blueberries and almond milk for breakfast or if I’m feeling fancy I’ll put it with yoghurt and whatever fresh fruit we have in the house with some rice syrup (or honey if you prefer!).

The BEST Green Juice recipe


Green juices have become increasingly popular over the past year, as people have started to realise that it is much easier to drink a salad than eat it! Personally, I have found that the recipes I’ve used in the past either taste TOO green (pure kale juice really isn’t my thing…) or involve too many ingredients and steps that make the whole process very time-consuming.

I’ve definitely been having too many ‘cheat’ days recently, (filled with a whole large dominos pizza, an Indian takeaway and plenty of chocolate), and therefore have been trying to drink plenty of smoothies to balance it out, because drinking a smoothie alongside a whole pizza makes it healthy, right?? I began experimenting with some greens I found in the fridge and in the process I believe I have made the BEST green smoothie ever (… or at least out of the ones I’ve tried!).


The recipe is super simple and consists of only a handful of baby spinach, a handful of kale, a pear, a couple of tablespoons of chopped pineapple and a slice of lemon (make sure you cut off the skin and pith)! Unlike many other recipes that involve needing a juicer, which are super expensive and a pain to wash, this juice (or smoothie?) can be made in a simple blender! The one I use is super inexpensive and can be bought here. Just simply throw all of the ingredients into the blender with some ice cubes and water and blend until smooth!


The benefits of the ingredients in this juice are endless; kale and spinach are both absolutely packed with nutrients, pineapple and pears are a rich source of antioxidants (and add a sweetness, which is definitely necessary!) and the lemon helps boost the immune system, as well as adding a great flavour!
